Foodservice Project Management
We deliver turnkey commercial kitchens and foodservice programs — from design coordination and M/E/P sequencing to equipment commissioning and health-department acceptance.
Johnson-Lancaster combines construction discipline with deep foodservice technical expertise. We are the single point of accountability for complex kitchen programs: equipment buy-outs and cutbooks, manufacturer shop-drawing management, M/E/P coordination and sequencing, on-site installation oversight and formal commissioning to validated acceptance criteria. Our SOPs and workflow ensure repeatable, auditable delivery on every project.
custom commercial kitchen fabrication
Foodservice Equipment Coordination & Install — receive, stage, set-in-place, level and secure equipment; coordinate gas, water, waste and service connections with trades to factory tolerances.
Shop Drawings & Fabrication Management — manage manufacturer shop drawings and tailored fabrication (stainless fixtures, pass-thrus, pot racks) to spec to avoid RFIs and site rework.
M/E/P sequencing & base-build integration — ensure HVAC, electrical service, gas and grease systems arrive and are tested on the critical path.
Project Documentation & Handover — as-built drawings, warranties, manufacturer O&M, commissioning reports and punch-list closeout.

Our process — tailored for kitchens
- Discover & Scope — Define menu-driven equipment lists, acceptance criteria and long-lead items during the kickoff. Verify cutbook accuracy and identify utility constraints early.
- Design Validation & Shop Drawings — Collect CAD/Revit and shop drawings, coordinate M/E/P rough-ins, and obtain approvals before fabrication or procurement.
- Procure & Mobilize — Release long-lead items (walk-ins, hoods, racks) with staging and warehousing plans to minimize site conflicts.
- Install, Start-up & Commission — Oversee set-in-place, start-up testing, FPTs and commissioning. Coordinate trades for final tie-ins and witness manufacturer start-ups to confirm performance.
- Closeout & Warranty — Complete final punch lists, deliver training and documentation, and transition the project into warranty support.
Technical capabilities
- Shop drawing control for major manufacturers — verification of clearances, utilities and hood interfaces for Hobart, Vulcan and other major brands.
- Tailored stainless fabrication — custom pass-thrus to FS specs.
- Equipment installation scope — staged delivery management, install team planning, set-in-place, leveling and fastenings; final utility connections by licensed trades while J-L coordinates and witnesses.
